Kombucha: biotechnology in your glass
Keywords:
Kombucha, Fermentation, SCOBYAbstract
The beverage we now know as “kombucha” is a fermented and carbonated tea. It is commonly made from sweetened tea (black or green) to which symbiotic colonies of bacteria and yeast are added, embedded in a cellulose gelatin called a SCOBY (Symbiotic Culture of Bacteria and Yeast). The SCOBY is the “living engine” that transforms the tea into kombucha through fermentation. This process benefits the human body by improving digestion and supporting a healthy gut microbiota.
